Sunday Night Dinner--A Fresh Spin on Crab Cakes
Almost every Sunday night I try to make a different meal--something new. Tonight I made a Caesar Salad with ParmesanToasts, homemade Caesar dressing, Roasted Asparagus and Wild Rice Crab Cakes.
Wild Rice Crab Cakes
1 package of Zatarain's Long Grain and Wild Rice
8 ounces of lump crab meat
2/3 cup of mayo (low-fat)
1 shallot, minced
3 strips roasted red peppers, minced
2/3 cup bread crumbs
1 1/2 t. dijon mustard
1/8 t. red pepper
1/8 t. cumin
salt and pepper
Cook rice mix according to package directions. Meanwhile, in a bowl combine all other ingredients. Add cooked rice to mixture. Divide mixture into 10 cakes and cook in 4 T. olive oil over medium heat until lightly browned.
