I am completely obsessed with The Pioneer Woman.
Obsessed may be too strong of a word--I'm not a stalker I don't think, but I really like her.
I think that we would be friends (maybe I am a stalker).
She cooks like I want to cook.
Not fancy-schmancy, just really good food.
(Sometimes I do like fancy-schmancy, just not today).
Reading her blog everyday was actually the reason that I started blogging.
I thought, I can do that.
Maybe not 5 different posts everyday, but I can write about all of my recipes, ideas, thoughts.
I have subscribed to her blog for a while now and everyday when I get my email I drool over what she makes. I usually save them all.
Well, the other day I came across a recipe for Spicy Pulled Pork.
I love spicy and I love pulled pork. What I love even more is sweet and spicy.
So here you go.
I changed it up a bit by adding cole slaw for the sandwich which I served on
sweet, delicious, Hawaiian rolls (---yum, yum, yum).
Spicy Pulled Pork Sandwiches with Cole Slaw
(slightly adapted from Pioneer Woman)
2-3 pound pork loin roast
1 onion, cut into quarters
1 can chipotle peppers in adobo (7 ounce can)
2 cans Dr. Pepper
4 tablespoons brown sugar
salt and pepper
Place cut onion into bottom of crock pot. Salt and pepper the pork loin and place in the crock pot on the onions. Add the chipotle peppers and brown sugar. Pour Dr. Pepper over all and stir to combine.
Cook on high for 6-7 hours.
Remove roast from crock pot and shred with forks.
Place roast back into crock pot and cook for another hour.
1 package shredded cabbage
3 green onions, chopped
3/4 cup mayonnaise
2 tablespoons creole mustard
2 tablespoon chopped sweet jalapenos
1 tablespoon juice from jalapenos
Combine all ingredients in bowl and mix well. Place in refrigerator and allow to chill for at least 30 minutes prior to serving.
