Pineapple Mango Salsa

Wow!  This has been a heck of a week.  It seems like evaluations have fallen out of the sky (with my day job) and my Dad's illness has definitely thrown me for a loop (the only computer time I've been putting in is with research).  My Dad is in the hospital with pancreatitis due to complications with Metastatic Melanoma.  So no joke--stay out of the sun!!  If you are like me, though, this is so hard.  I'm a total sun worshiper.  We take a beach vacation almost every year.  But, I must brag--I don't even know the last time I've been even a little bit sunburnt.  I'm a true believer in sunscreen and faux tans.  I also get checked out by the Dermatologist every six months.  

So I don't know why I'm off on this tangent.  I'm actually here to share with you one of my favorite grilling salsa recipe.  This salsa is so good on chicken, pork, beef, and seafood.  Also with chips or my current--Beanitos (being allergic to corn and all).  You can also add black beans or avocado to this recipe and it's super delicious.

One of the best ways to enjoy it is with Jerk Chicken Thighs--spicy and sweet.  A great combination.

Pineapple Mango Salsa

Printable Recipe

1 cup pineapple, diced
1 cup mango, diced
3/4 cup red onion, minced
3 tablespoons jalapeno, minced
1/4 cup poblano pepper, minced
1 teaspoon salt
1/2 teaspoon cumin
1 tablespoon lime juice

Mix all ingredients in a bowl.  Cover and refrigerate for up to 1 week.
