Happy Hour-Aperol Spritz

Whenever I write these Happy Hour posts I get a little giddy.  First, I'm so happy that it's almost the weekend and second, who doesn't love a great cocktail. The Aperol Spritz is one of those classic cocktails that is taking Europe by storm.  It was on advertisements and menus everywhere. Definitely a very compelling argument for having one, when it's everywhere you see.  It's super refreshing, especially when the weather is hot and you want a cold, thirst-quenching cocktail.

Aperol is considered to be an Aperitif, a light, and refreshing drink to spark the appetite. That definition fits the Aperol Spritz perfectly.   Aperol is similar to Campari, but the alcohol content is less than half.  It's bright orange in color and the flavor has hints of rhubarb, orange, and floral herbs.

Aperol Spritz

2 ounces Aperol
4 ounces Sparkling Wine
splash of club soda
orange slices for garnish

Combine the Aperol, sparkling wine, and club soda in a glass with ice.  Garnish with orange slices.  Serve chilled.
