Happy Hour--Plum Thyme Cooler

Some of our best friends, Robin & Randy, have the most to-die-for pool and they are unbelievably generous to invite us over all summer long.  We lounge by the pool, cookout, and I always try to make us some kind of special cocktail.  This past weekend I made a version of this cocktail.  It is super delicious and perfect for a day spent at the pool.

I've really been on a quest to make cocktails with other liquors than vodka and tequila.  They are my true cocktail loves, but I'm trying hard to venture out.  I also have been wanting to use more of the herbs that I plant every year. So I decided on summer fresh plums, gin, and an amazing thyme simple syrup.  

Plum Thyme Cooler

3 ounces pureed plums
2 ounces gin (I used Booths)
1-ounce thyme simple syrup
1-ounce lemon juice
club soda
plum slices and thyme sprigs for garnish

For the thyme simple syrup:
1 cup water
1 cup sugar
5 sprigs of thyme

To make the thyme simple syrup:
Combine the water and sugar in a small saucepan.  Melt the sugar and bring to a boil.  Add the thyme sprigs and allow the syrup to boil for 10 minutes.  Turn off the heat and allow to cool.  Place the syrup in the refrigerator once cooled.  Will keep, refrigerated, for 1 week.

To make the cocktail:

Fill a cocktail shaker with ice.  Add the pureed plums, gin, thyme simple syrup, and lemon juice.  Shake vigorously and pour into a glass.  Top with club soda.  Garnish with a plum slice and thyme sprigs.
