Chocolate Banana Bread

I absolutely hate throwing away produce.  I try my absolute best to only buy what I think I'm going to need because it's such a tremendous waste (and expense).  The Mr. actually does most of the grocery shopping and he is really bad about buying too much.  I tell him to bring me one avocado, then I end up with three.  But bananas, that's a whole different story. I actually like when they get too ripe to eat.  You know what that means--Banana Bread.

Usually, I make my all-time favorite banana bread, but this time I thought I would mix it up a little.  I've actually made this recipe before and served it as a dessert with chocolate ganache. I decided to leave off the ganache and enjoy it as a breakfast treat (even though as a dessert, it would be perfect).

Chocolate Banana Bread

  • 3 bananas, mashed (about 1 1 2/ cups)
  • 2 eggs
  • 1 cup sugar
  • 2 teaspoons vanilla
  • 1/4 cup oil (I used Canola-Olive blend)
  • 1/3 cup sour cream
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup semi-sweet chocolate chips, melted


  1. Preheat oven to 350 degrees.
  2. In a large bowl, add the mashed bananas, eggs, sugar, vanilla, and oil.  Stir to combine.  
  3. In another bowl, add the flour, salt, baking soda, baking powder, and cinnamon.  Mix well.
  4. Add the flour mixture to the banana mixture and mix well.
  5. In a small, microwave-safe bowl, melt the chocolate chips in 30-second intervals at 50% power until completely melted.
  6. Add 2 cups of the bread mixture to an oiled and floured loaf pan.  Add half of the chocolate and swirl together with a knife.  Repeat with the remainder of bread mixture and chocolate.
  7. Bake for 1 hour and 10 minutes or until a toothpick when inserted comes out clean. 
  8. Let the bread cool in the pan for 10 minutes and then transfer to a wire rack until completely cooled.
