Happy Hour--The Gravedigger

What puts you in a more festive mood than a spooky cocktail?  Since Halloween is right around the corner, I've got several spooky and festive themed happy hour drinks to get you ready for All Hallow's Eve.  Let's start first with The Gravedigger. 

The inspiration for this cocktail came from a fantastic little bourbon lounge in Portland, Oregon called The Pope House.  Rich with bourbon, Aperol, Byrrh, and lemon juice this spooky concoction is the perfect Halloween cocktail. I named this cocktail The Gravedigger due to the earthiness of the bourbon and Byrrh.  I also thought that it sounded a little bit scary too.  I'm usually not a "scary" kind of girl--no horror movies or haunted houses, but a spooky cocktail--I can do that.

Tasting Notes: This cocktail is primarily a Bourbon cocktail- soft and smooth with a slight citrus flavor thanks to the Aperol and lemon juice and a mild fruitiness and spice due to the Byrrh. It's very mild and refreshing with a bit of earthiness.

Yield: 1 cocktail

The Gravedigger


  • 2 ounces Bourbon (I used Four Roses)
  • 1/2 ounce Aperol
  • 1 ounce Byrrh
  • 1/2 ounce freshly squeezed lemon juice
  • lemon peel for garnish
  • dry ice for fun


  1. Place all ingredients in a cocktail shaker filled with ice.  Shake vigorously and pour into a glass with a large ice cube. 
  2. Garnish with a lemon peel.
  3. I placed a little dry ice in the cocktail for the smoke and bubbles-make sure it has completely melted before consuming.
