Happy Hour--Sparkling Apple Cider Pomegranate Cocktails

One of my easy entertaining tips is to always have some kind of cocktail made when my guests arrive.  I think that it definitely sets the theme for the evening and definitely makes your guests feel really special.  I served this cocktail for the first time last year at Thanksgiving and it was a huge hit.  It's simple to make, elegant, and super delicious.  Three ingredients and a garnish--it will be the easiest thing you will make the entire holiday season. (Also, if there are kids present, just fill the champagne glasses with the juice and they get to feel special too!)

Yield: makes 6-8 cocktails

Sparkling Apple Cider Pomegranate Cocktail


  • 3 cups apple cider
  • 1/4 cup pomegranate  juice
  • 1 bottle champagne or sparkling wine
  • pomegranate arils for garnish


  1. In a pitcher, combine the apple cider and pomegranate juice. Chill until ready to serve.
  2. When you are ready to serve, place a few arils in the bottom of a champagne glass. Next, add the apple cider pomegranate juice into a champagne flute filling 2/3 of the glass.  Top with champagne.
